Holiday Hit Sweet Potato Cranberry Casserole

Ingredients

- 4 large sweet potatoes
- 2 cups fresh cranberries
- 1/2 cup packed brown sugar
- 2 tablespoons butter, melted
- 1/2 cup orange juice
- 1/2 cup chopped walnuts
- 1/4 cup packed brown sugar
- 1/2 teaspoon ground cinnamon
- 3 tablespoons cold butter
Recipe
- 1 place sweet potatoes in a dutch oven & bring to a boil.
- 2 reduce heat, cover and simmer for 40-50 minutes or until tender.
- 3 drain.
- 4 when cool enough to handle peel potatoes and cut into 1/4 inch slices.
- 5 place half in a greased 2-1/2 quart baking dish.
- 6 top with half of the cranberries, brown sugar, and butter.
- 7 repeat layers.
- 8 pour orange juice over top.
- 9 cover and bake at 350 degrees f for 30 minutes.
- 10 in a bowl combine the walnuts, brown sugar, and cinnamon and cut in butter.
- 11 sprinkle over sweet potato mixture.
- 12 bake uncovered 10 minutes longer or until topping is golden brown.
