Eric's Cheesy Mac N' Cheese

Ingredients
- Servings: 10
- 1 lb elbow macaroni
- 1/2 cup oleo or 1/2 cup butter
- 1/2 cup flour
- 1 quart skim milk
- 1 lb velveeta cheese
- 4 ounces sharp cheddar cheese
- 2 teaspoons salt
- 1/2 teaspoon pepper
- 1/2-3/4 cup swiss cheese, grated
Recipe
- 1 cook macaroni.
- 2 melt oleo or butter, remove from heat.
- 3 stir in flour.
- 4 return to heat, cook , stirring constantly for 3-5 minute.
- 5 add milk very slowly stirring constantly until all milk is added.
- 6 continue cooking until mixture thickens, stirring almost constantly.
- 7 add salt and pepper.
- 8 cut cheese into sauce stir until melted.
- 9 pour sauce on mac and add grated swiss cheese on top.
- 10 bake 375 degrees for 30 to 40 minute.
