Eric's Cheesy Mac N' Cheese

Total Time: 50 mins Preparation Time: 20 mins Cook Time: 30 mins

Ingredients

  • Servings: 10
  • 1 lb elbow macaroni
  • 1/2 cup oleo or 1/2 cup butter
  • 1/2 cup flour
  • 1 quart skim milk
  • 1 lb velveeta cheese
  • 4 ounces sharp cheddar cheese
  • 2 teaspoons salt
  • 1/2 teaspoon pepper
  • 1/2-3/4 cup swiss cheese, grated

Recipe

  • 1 cook macaroni.
  • 2 melt oleo or butter, remove from heat.
  • 3 stir in flour.
  • 4 return to heat, cook , stirring constantly for 3-5 minute.
  • 5 add milk very slowly stirring constantly until all milk is added.
  • 6 continue cooking until mixture thickens, stirring almost constantly.
  • 7 add salt and pepper.
  • 8 cut cheese into sauce stir until melted.
  • 9 pour sauce on mac and add grated swiss cheese on top.
  • 10 bake 375 degrees for 30 to 40 minute.
