Cranberry Mousse

Ingredients

- 1 (20 ounce) can crushed pineapple with juice
- 3 tablespoons lemon juice
- 1 (6 ounce) package strawberry jell-o gelatin dessert
- 1 tablespoon lemon, zest of
- 1 cup water
- 1/4 teaspoon nutmeg
- 1 (1 lb) can whole berry cranberry sauce
- 2 cups sour cream
- 1/2 cup chopped pecans
Recipe
- 1 drain pineapple well, reserving all juice.
- 2 add juice to gelatin in a 2 qt saucepan.
- 3 stir in water.
- 4 heat to boiling, stirring to dissolve gelatin.
- 5 remove from heat.
- 6 blend in cranberry sauce.
- 7 add lemon juice, zest, and nutmeg.
- 8 chill until mixture thickens slightly.
- 9 blend sour cream into gelatin mixture.
- 10 fold in pecans and pineapple.
- 11 pour into 2 qt mold.
- 12 chill until firm.
- 13 unmold onto serving plate.
