Cranberry Mousse

Ingredients

  • Servings: 12
  • 1 (20 ounce) can crushed pineapple with juice
  • 3 tablespoons lemon juice
  • 1 (6 ounce) package strawberry jell-o gelatin dessert
  • 1 tablespoon lemon, zest of
  • 1 cup water
  • 1/4 teaspoon nutmeg
  • 1 (1 lb) can whole berry cranberry sauce
  • 2 cups sour cream
  • 1/2 cup chopped pecans

Recipe

  • 1 drain pineapple well, reserving all juice.
  • 2 add juice to gelatin in a 2 qt saucepan.
  • 3 stir in water.
  • 4 heat to boiling, stirring to dissolve gelatin.
  • 5 remove from heat.
  • 6 blend in cranberry sauce.
  • 7 add lemon juice, zest, and nutmeg.
  • 8 chill until mixture thickens slightly.
  • 9 blend sour cream into gelatin mixture.
  • 10 fold in pecans and pineapple.
  • 11 pour into 2 qt mold.
  • 12 chill until firm.
  • 13 unmold onto serving plate.
