Croquettes Lyonnaise

Total Time: 45 mins Preparation Time: 25 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 5 large waxy potatoes, peeled and grated
  • 1 onion, grated
  • 2 ounces smoked salmon, chopped
  • 1 garlic clove, crushed
  • 1 egg, beaten
  • 1 tablespoon chopped fresh parsley
  • salt
  • fresh ground black pepper
  • oil, for frying
  • sour cream, for serving
  • green onion, garnish

Recipe

  • 1 drain potatoes and onion in colander and wring dry.
  • 2 mix with salmon, garlic and egg, then add parsley and season to taste.
  • 3 form into small balls and flatten slightly.
  • 4 fry in hot oil until golden brown.
  • 5 drain well and serve hot.
  • 6 serve with sour cream with green onions.
