Fried Parmesan Cauliflower

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1 head cauliflower, dry
  • 2 tablespoons water
  • 1/4 cup flour
  • 2 eggs
  • 1/4 parmesan cheese, grated or 1/4 cup cheddar cheese, grated will work also
  • salt and pepper
  • italian parsley, handful finely chopped
  • 3 tablespoons olive oil

Recipe

  • 1 break dry cauliflower into florets.
  • 2 place florets in the 2 tablespoons water and steam in microwave, covered, for 3 to 6 minutes.
  • 3 drain and cool completely, 3 to 5 minutes.
  • 4 place flour in one bowl.
  • 5 beat eggs, cheese, salt and pepper together in a separate bowl.
  • 6 finely chop parsley and add to egg mixture.
  • 7 heat the olive oil in a large saucepan, over medium until hot, but not bubbly.
  • 8 dip florets in flour, then in egg mixture.
  • 9 fry florets until brown.
  • 10 drain on paper towels.
  • 11 serve.
