Fried Parmesan Cauliflower

Ingredients
- Servings: 4
- 1 head cauliflower, dry
- 2 tablespoons water
- 1/4 cup flour
- 2 eggs
- 1/4 parmesan cheese, grated or 1/4 cup cheddar cheese, grated will work also
- salt and pepper
- italian parsley, handful finely chopped
- 3 tablespoons olive oil
Recipe
- 1 break dry cauliflower into florets.
- 2 place florets in the 2 tablespoons water and steam in microwave, covered, for 3 to 6 minutes.
- 3 drain and cool completely, 3 to 5 minutes.
- 4 place flour in one bowl.
- 5 beat eggs, cheese, salt and pepper together in a separate bowl.
- 6 finely chop parsley and add to egg mixture.
- 7 heat the olive oil in a large saucepan, over medium until hot, but not bubbly.
- 8 dip florets in flour, then in egg mixture.
- 9 fry florets until brown.
- 10 drain on paper towels.
- 11 serve.
