Fried Plantains

Total Time: 10 mins Preparation Time: 2 mins Cook Time: 8 mins

Ingredients

  • Servings: 2
  • 2 medium plantains, very ripe
  • 1/2 cup whole wheat flour
  • 1 teaspoon cinnamon
  • 1/2 teaspoon fresh ground black pepper
  • 1 teaspoon sugar
  • 4 tablespoons butter

Recipe

  • 1 combine flour, cinnamon, pepper and sugar in a zip-top plastic bag.
  • 2 heat butter in a shallow skillet until melted.
  • 3 peel plantains and slice into 1/2-inch thick rounds, then add to flour mixture and shake well.
  • 4 remove plantain slices from bag, shaking off excess flour mixture, and place in prepared skillet.
  • 5 fry 4 minutes on each side, or until golden brown and crisp.
  • 6 drain on paper towels and serve hot.
  • 7 if desired, drizzle with a little honey to make a dessert instead of a side dish.
