Fried Plantains

Ingredients

- 2 medium plantains, very ripe
- 1/2 cup whole wheat flour
- 1 teaspoon cinnamon
- 1/2 teaspoon fresh ground black pepper
- 1 teaspoon sugar
- 4 tablespoons butter
Recipe
- 1 combine flour, cinnamon, pepper and sugar in a zip-top plastic bag.
- 2 heat butter in a shallow skillet until melted.
- 3 peel plantains and slice into 1/2-inch thick rounds, then add to flour mixture and shake well.
- 4 remove plantain slices from bag, shaking off excess flour mixture, and place in prepared skillet.
- 5 fry 4 minutes on each side, or until golden brown and crisp.
- 6 drain on paper towels and serve hot.
- 7 if desired, drizzle with a little honey to make a dessert instead of a side dish.
