Fruit And Nut Couscous Stuffing

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • Servings: 8
  • 3 cups vegetable broth
  • 2 1/2 cups couscous
  • 1 cup golden raisin
  • 5 tablespoons butter
  • 1 1/2 cups walnuts, chopped
  • 1 bunch celery, thinly sliced crosswise and leafy greens finely chopped separately
  • 1 large red onion, finely chopped
  • 1 lemon, grated peel and juice of
  • salt and pepper

Recipe

  • 1 in a large saucepan, bring the vegetable broth to a boil.
  • 2 stir in couscous, cover the pan, and remove from heat.
  • 3 let sit until the liquid is absorbed, about 10 minutes.

  • 12 stir the cooked vegetables, celery leaves, and walnuts into the couscous.
