Croutons With Chevre And Red Peppers

Ingredients
- 1 baguette
- olive oil
- 4 ounces of marinated chevre cheese
- 2 roasted sweet red peppers
Recipe
- 1 cut a baguette into 1/4-inch slices. brush the slices lightly with olive oil and bake at 350f for 10 minutes, or until they are light brown.
- 2 beat/mix the chevre and its marinade until the mixture is creamy.
- 3 spread a thin layer of cheese on each crouton and top with a strip of roasted and peeled sweet red pepper. place the croutons under the broiler until bubbly.
- 4 serve at once.
