Edamame With Dipping Sauce

Ingredients
- Servings: 4
- 1/2 tablespoon coarse sea salt (or kosher salt)
- 1 (1 lb) bag frozen edamame
- bowl ice water
- 2 tablespoons reduced sodium soy sauce
- 2 tablespoons rice wine vinegar
- 1/2 teaspoon toasted sesame oil
- 1 teaspoon honey
- 1 garlic clove, minced
- 1 tablespoon scallion, chopped
Recipe
- 1 place the salt into a small ungreased skillet. place over medium heat and cook until tan colored - about 6-7 minutes; toss as it cooks. set aside.
- 2 place the edamame into a pot of boiling water and cook until tender - 4 minutes. you want to cook out the raw taste but not let them get mushy.
- 3 immediately transfer with a slotted spoon to a bowl of ice-water to stop the cooking.
- 4 drain and pat dry and toss with prepared salt.
- 5 prepare the dipping sauce by whisking the soy sauce, vinegar, sesame oil, honey, garlic, and scallions.
- 6 serve in small dipping bowl with the edamame.
