Frank's Special Spanish Style Rice

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 2 cups rice
  • 4 cups water
  • 1/2 cup green spanish olives, sliced thin
  • 6 ounces tomato paste
  • 1 onion, sliced thin
  • 7 tablespoons vegetable oil
  • 2 tablespoons salt
  • 2 (1/4 ounce) packets sazon goya
  • 1/2 teaspoon ground cumin
  • 1 tablespoon garlic powder
  • 2 tablespoons achiote seeds
  • 6 tablespoons sofrito sauce

Recipe

  • 1 heat oil in skillet. add seeds, and wait until they loose color. scoop them out.
  • 2 add onions and saute until soft and translucent. add all remaining ingriedients and stir well. when liquid has been absorbed by rice, lower flame and cover until rice is cooked. you can add a can of rinsed beans & or cooked sausage at this point if you'd like.also ,if you can't find sofrito, you can saute 1/2 small chopped red & 1/2 small chopped green pepper with onion.
