Gingery Sweet Potatoes (oamc)

Ingredients

  • Servings: 4
  • 3 large sweet potatoes, peeled and cut into 1 inch pieces
  • 2 tablespoons frozen orange juice concentrate, thawed
  • 2 tablespoons packed brown sugar
  • 2 teaspoons fresh ginger, minced
  • 1/2 teaspoon butter or 1/2 teaspoon margarine
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon mace
  • 1/4 teaspoon salt

Recipe

  • 1 place sweet potatoes in a large sauce pan and add water to cover.
  • 2 bring to a boil over medium heat.
