Glazed Broiled Tomatoes

Ingredients

  • Servings: 6
  • 4 large tomatoes (cut in half or 1/2 inch slices)
  • 3 tablespoons mayonnaise
  • 1 teaspoon dijon mustard
  • 2 tablespoons fresh flat-leaf parsley, finely chopped
  • 2 teaspoons fresh chives, finely chopped
  • salt & freshly ground black pepper
  • 3 tablespoons parmesan cheese, freshly grated

Recipe

  • 1 preheat the oven to 400 degrees. place the tomatoes cut side up in a medium baking dish.
  • 2 in a small bowl, stir together the mayo, mustard, 1 tablespoons of the parsley, the chives, salt and pepper to taste and 2 tablespoons of the parmesan cheese. spoon a heaping teaspoon of the mayo mixture on each tomato and spread to cover. sprinkle the tomatoes with the remaining 1 tablespoons cheese.
  • 3 bake for 10-12 minutes, or until hot. turn on the broiler and broil the tomatoes until brown and bubbling, about 2-3 minutes. sprinkle with the remaining 1 tablespoons parsley and serve immediately.
