Grilled Potatoes With Butter And Garlic Glaze

Ingredients

- 2 large yukon gold potatoes, washed and dried
- 6 tablespoons butter, softened and divided
- 1/2 teaspoon fresh parsley, chopped
- 1/2 teaspoon salt
- 1/2 teaspoon fresh ground black pepper
- 1/4 teaspoon sugar
- 1/8 teaspoon garlic, minced
- 1/4 cup green onion, sliced (for garnish)
Recipe
- 1 preheat grill to medium-high heat.
- 2 spray grill rack with nonstick nonflammable cooking spray.
- 3 using a fork, pierce each potato 8-10 times.
- 4 rub 1 t butter evenly on each potato.
- 5 wrap potatoes in heavy-duty aluminum foil.
- 6 grill, covered with a grill lid, for 40-45 minutes, or until potatoes are cooked through.
- 7 remove potatoes from grill.
- 8 cut potatoes lengthwise into quarters.
- 9 grill potato quarters for 2-3 minutes per side, or until lightly golden.
- 10 in a grill-safe saucepan, melt remaining 4 t butter.
- 11 add parsley, salt, pepper, sugar and garlic, stirring well to combine.
- 12 brush butter mixture on grilled potatoes.
- 13 garnish with green onion, if desired.
- 14 serve immediately.
