Grilled Potatoes With Butter And Garlic Glaze

Total Time: 55 mins Preparation Time: 15 mins Cook Time: 40 mins

Ingredients

  • Servings: 4
  • 2 large yukon gold potatoes, washed and dried
  • 6 tablespoons butter, softened and divided
  • 1/2 teaspoon fresh parsley, chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon fresh ground black pepper
  • 1/4 teaspoon sugar
  • 1/8 teaspoon garlic, minced
  • 1/4 cup green onion, sliced (for garnish)

Recipe

  • 1 preheat grill to medium-high heat.
  • 2 spray grill rack with nonstick nonflammable cooking spray.
  • 3 using a fork, pierce each potato 8-10 times.
  • 4 rub 1 t butter evenly on each potato.
  • 5 wrap potatoes in heavy-duty aluminum foil.
  • 6 grill, covered with a grill lid, for 40-45 minutes, or until potatoes are cooked through.
  • 7 remove potatoes from grill.
  • 8 cut potatoes lengthwise into quarters.
  • 9 grill potato quarters for 2-3 minutes per side, or until lightly golden.
  • 10 in a grill-safe saucepan, melt remaining 4 t butter.
  • 11 add parsley, salt, pepper, sugar and garlic, stirring well to combine.
  • 12 brush butter mixture on grilled potatoes.
  • 13 garnish with green onion, if desired.
  • 14 serve immediately.
