Grilled Bread With Zucchini, Ricotta, And Basil

Ingredients

  • Servings: 4
  • 4 1/2 inches thick slices country bread
  • 2 tablespoons olive oil
  • 4 small zucchini, thinly slice lengthwise (2 lbs)
  • 1 cup fresh basil, leaves torn
  • 1/4 teaspoon crushed red pepper flakes
  • kosher salt
  • 1 cup fresh ricotta

Recipe

  • 1 brush bread with olive oil and grill over medium - high heat until golden brown.
  • 2 grill zucchini until tender and slightly charred, 3-4 minutes per side.
  • 3 toss in large bowl with remaining ingredients and remaining olive oil.
  • 4 top bread with zucchini mixture and ricotta.
