Easy Vegan Cornbread

Ingredients
- 2 cups cornmeal
- 1 cup unbleached all-purpose flour
- 3 teaspoons baking powder
- 1/3 cup canola oil
- 2 tablespoons maple syrup
- 2 cups soymilk
- 2 teaspoons apple cider vinegar
- 1/2 teaspoon salt
Recipe
- 1 preheat oven to 350, spray a 9x13 baking pan with non-stick cooking spray.
- 2 wisk together the soymilk and the vinegar and set aside.
- 3 in a large bowl, mix together the dry ingredients (cornmeal, flour, baking powder and salt).
- 4 mix the oil and maple syrup into the soymilk mixture.
- 5 pour the wet ingredient into the dry and mix together. pour batter into the prepared baking pan and bake 30-35 minutes, until a toothpick inserted into the center comes out clean.
- 6 serve warm or store in an airtight container.
