Easy Vegan Cornbread

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • 2 cups cornmeal
  • 1 cup unbleached all-purpose flour
  • 3 teaspoons baking powder
  • 1/3 cup canola oil
  • 2 tablespoons maple syrup
  • 2 cups soymilk
  • 2 teaspoons apple cider vinegar
  • 1/2 teaspoon salt

Recipe

  • 1 preheat oven to 350, spray a 9x13 baking pan with non-stick cooking spray.
  • 2 wisk together the soymilk and the vinegar and set aside.
  • 3 in a large bowl, mix together the dry ingredients (cornmeal, flour, baking powder and salt).
  • 4 mix the oil and maple syrup into the soymilk mixture.
  • 5 pour the wet ingredient into the dry and mix together. pour batter into the prepared baking pan and bake 30-35 minutes, until a toothpick inserted into the center comes out clean.
  • 6 serve warm or store in an airtight container.
