Easy Wilted Spinach Salad

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 2
  • 2 bunches baby spinach
  • 6 ounces balsamic vinegar
  • 1/4 onion, minced
  • 3 garlic cloves, minced
  • 4 ounces dried cranberries
  • 1 tablespoon extra virgin olive oil
  • 1/8 cup pine nuts

Recipe

  • 1 cook the onions untill translucent in the olive oil.
  • 2 add garlic and cook for an additional 2 minutes.
  • 3 add the baslamic vinegar.
  • 4 bring to a boil and reduce to 1/2 origional.
  • 5 add spinach leaves and cook untill wilted (2-5 minutes).
  • 6 move spinach to serving bowl.
  • 7 roast pine nuts over medium heat.
  • 8 add pine nuts and dried crainberries to spinach and mix.
  • 9 serve warm.
