Erev Shabbos Potato Kugel

Total Time: 2 hrs 20 mins Preparation Time: 20 mins Cook Time: 2 hrs

Ingredients

  • Servings: 12
  • 10 large idaho potatoes, peeled
  • 1 medium onion
  • 1/2 zucchini (optional)
  • 4 eggs
  • 1/2 cup oil
  • salt
  • black pepper

Recipe

  • 1 preheat oven to 400°f.
  • 2 crack eggs into bowl of food processor, fitted with grinding blade.
  • 3 grate onion, potatoes and zucchini directly into eggs.
  • 4 remove to bowl, add oil, salt and pepper to taste and mix thoroughly.
  • 5 pour into 9x13 pan and bake in preheated oven for 2 hours.
