Easy Turkey Sausage Cornbread Stuffing

Ingredients
- Servings: 4
- 1/2 lb cooked turkey sausage (whatever flavor sounds good to you)
- 1/2 onion, diced
- 1/2 red bell pepper, diced
- 2 chicken bouillon cubes, dissolved in 2 cups boiling water
- 2 minced garlic cloves
- 2 tablespoons butter
- 2 tablespoons olive oil
- 5 -6 corn muffins, about 3 inches in diameter
Recipe
- 1 melt the butter with the olive oil over medium heat. saute the onions and peppers until soft and translucent.
- 2 add the garlic and sausage, cook for another 1 to 2 minutes, stirring frequently.
- 3 remove from heat, slowly add the chicken bouillion broth to moisten the mixture to your liking. i used about a cup and a half. serve.
