Ethiopian Fava Beans

Ingredients

- 2 cups fresh fava beans, washed
- 6 cups water
- 1 1/2 cups vegetable oil
- 2 cups red onions, chopped
- 1 tablespoon garlic, minced
- 1 teaspoon cayenne pepper
- 1/4 teaspoon ground cumin
- 1 teaspoon salt
Recipe
- 1 put the beans in a large pot and cover with the water. boil until the beans are tender but not mushy. this could take anywhere from 5 to 15 minutes, depending on the freshness of the beans.
- 2 in a skillet, heat the oil until it is hot (but not smoking) and then saute the onion and garlic. add the cayenne, cumin and salt. cook until the onion has softened, about 5 minutes, stirring occasionally.
- 3 add the onion and garlic mixture to the beans and bring to a boil. reduce the heat and simmer for about 30 minutes.
- 4 enjoy!
