Crispy Chickpeas

Ingredients

- vegetable oil, for frying (3 cups)
- 3 (15 ounce) cans chickpeas, drained rinsed and patted dry
- 1 1/2 tablespoons ground coriander
- 1 tablespoon ground cumin
- 1 cup all-purpose flour
- kosher salt
Recipe
- 1 heat oil to 350 degrees f in a large saucepan; line a baking sheet with paper towels.
- 2 in a medium bowl, toss the chickpeas with the coriander and cumin; add flour and toss to coat the chickpeas, then transfer to a sieve and tap to release excess flour.
- 3 fry chickpeas (1/3 at a time) in oil, stirring occasionally, until browned and crispy, about 8 minutes; use a slotted spoon to remove to paper towel lined pan and sprinkle liberally with salt.
- 4 repeat with remaining chickpeas; let cool and serve.
