Italian Sausage And Spinach Scramble

Ingredients

• 1/2 cup chopped red pepper
• 4 -5 ounces frozen spinach or 1/2 cup fresh spinach, torn into almond-sized pieces

• 1 lb ground italian sausage
• 1/4 cup onion, chopped
• 8 large eggs, lightly beaten
• 1/2 cup feta cheese, crumbled

Recipe

• 1 spray frypan with non-stick spray.
• 2 add the sausage pieces, bell pepper, and onion. cook, stirring, until the sausage has browned and the pepper and onion are soft, 3-4 minutes.
• 3 stir in the spinach and cook about 1 minute.
• 4 pour in eggs and season with pepper.
• 5 reduce heat to medium-low, sprinkle the feta cheese on top, and cook, stirring, until the eggs have just set, approximately 2 minutes.
• 6 serve immediately. (i also like it warmed up).
