Crispy Coated Cajun Fries

Ingredients
- 2 russet potatoes, cut into fries
- 1/3 cup masa flour
- 2 teaspoons cornmeal
- 2 teaspoons cajun seasoning
- oil, to fry
Recipe
- 1 peel and cut potatoes into fries. soak in cold water until ready to use, but at least 10 minutes.
- 2 in a bowl or zip bag, combine masa flour, cornmeal and cajun seasoning. blend well.
- 3 drain the potatoes but leave them wet.
- 4 dip fries into the seasoning mixture and shake to coat.
- 5 heat oil (375 deg.) in cast iron pan or deep fryer.
- 6 cook fries in the hot oil for 7-10 minutes until golden brown.
- 7 remove from fryer and drain on paper towels.
- 8 season with salt.
