Crispy Coated Cajun Fries

Total Time: 30 mins Preparation Time: 20 mins Cook Time: 10 mins

Ingredients

  • 2 russet potatoes, cut into fries
  • 1/3 cup masa flour
  • 2 teaspoons cornmeal
  • 2 teaspoons cajun seasoning
  • oil, to fry

Recipe

  • 1 peel and cut potatoes into fries. soak in cold water until ready to use, but at least 10 minutes.
  • 2 in a bowl or zip bag, combine masa flour, cornmeal and cajun seasoning. blend well.
  • 3 drain the potatoes but leave them wet.
  • 4 dip fries into the seasoning mixture and shake to coat.
  • 5 heat oil (375 deg.) in cast iron pan or deep fryer.
  • 6 cook fries in the hot oil for 7-10 minutes until golden brown.
  • 7 remove from fryer and drain on paper towels.
  • 8 season with salt.
