- 6 cups butternut squash, peeled, seeded, cubed
- 4 large leeks, sliced
- 2 tablespoons fresh rosemary leaves
- 1 tablespoon thyme
- 1 teaspoon coarse salt
- 1 teaspoon pepper
- 1/4 cup olive oil
Recipe
- 1 preheat oven to 400 degrees.
- 2 combine all ingredients in a large bowl, toss to coat with oil.
- 3 spread on a large baking sheet.
- 4 bake 30 minutes or until vegetables are tender and slightly browned.
