- 4 medium potatoes, peeled
- 3 slices bacon, diced
- butter or oil (for frying)
- 1 onion, sliced
- 1 tablespoon chopped fresh oregano
Recipe
- 1 parboil potatoes (or microwave on high for 5 minutes). cut into medium thick slices. fry bacon until fat is transparent. add butter and fry onion and potato with bacon, turning until browned. sprinkle with oregano. serves 6.
