Hash Browns Breakfast Bake

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 1 (10 ounce) package sausage links
  • 6 eggs
  • 1 (12 ounce) package frozen hash brown potatoes, thawed
  • 4 ounces shredded cheddar cheese (1 cup)
  • 1/3 cup half-and-half
  • 1/4 cup chopped bell pepper, mixed red and green
  • 1/4 cup chopped onion
  • 1/4 teaspoon salt (to taste)
  • 1 dash black pepper (to taste)

Recipe

  • 1 preheat oven to 350 degrees f.
  • 2 brown sausage links in skillet over medium heat until cooked through; remove from heat and cut into bite sized pieces.
  • 3 in a mixing bowl, lightly beat eggs; stir in all other ingredients.
  • 4 pour mixture into a greased 2-quart baking dish or casserole, and bake, uncovered, for 30 minutes, or until eggs are almost set.
  • 5 allow to stand 5 minutes before cutting into servings.
  • 6 serve hot.
